Baking bread with cast iron cookware

    Ingredients:

    • 375 grams all-purpose flour
    • 0.25 teaspoon instant yeast
    • 1.5 teaspoons salt
    • 350 milliliters lukewarm water

    Instructions:

    1. In a large mixing bowl, combine the flour, yeast, and salt. Stir to combine.

    2. Add the lukewarm water to the dry ingredients and stir until the dough comes together. The dough will be sticky and shaggy.

    3. Cover the bowl with plastic wrap and let the dough rise at room temperature for 12-18 hours.

    4. Preheat your oven to 230°C. Place a 4-6 quart cast iron Dutch oven with its lid in the oven to preheat for at least 30 minutes.

    5. Remove the Dutch oven from the oven and carefully place the dough in the center of the pot. It's ok if the dough looks messy - it will even out as it bakes.

    6. Replace the lid on the Dutch oven and return it to the oven.

    7. Bake for 30 minutes with the lid on, then remove the lid and bake for an additional 15-20 minutes, or until the bread is golden brown and crusty.

    8. Remove the bread from the Dutch oven and let it cool on a wire rack for at least 30 minutes before slicing and serving.
